Abstract

It has been show that Rural Agroindustrias (AIR) exist wherw are actors with limited capacity of action. Under this premise, we carried out the research at the Departament of Cajamarca in Northern Peru. We applied the approach of Localized Agri-Food Systems (SIAL), at cheese rural enterprises. Our objetive is to strength production activities. We present theoretical bases for SIAL concepts and for the search of specific resources for the region. Furthenore, we analyze and propose strategies to improve production and productivity of cheese producers and to optimize the of SIAL.
