Abstract

This document presents a description of the main coffe plantations as agro-ecosystems of the High Mountains of Chiapas. It also presents a historic review of coffee plantations' origins, the influence of different countries over the model proposed by the Mexican Coffee Institute and the current situation of coffee production. Finally, we discuss coffe's borer disease, as one of the most important production constraints in Chiapas and some management strategies for production.
