Abstract

Abstract. The oyster Crassostrea virginica faces limitations due to sanitary problems. The objective of the present study was to evaluate the bacterial charge of the oyster, Crassostrea virginica, from the collection point in Laguna de Alvarado, Veracruz, up to distribution channels to sales and consumption in different commercial points in Mexico City. The bacteria were isolated, quantified, purified and presumably identified, following the Merck Manual criteria and then results were confirmed with the API-2OE. In order to determinate the significant differences between each of the commercialization process stages unilateral variance analysis was made. Different calculated F ratio, indicated homogenous condition stage of the process in relation to quantity and diversity of isolated species, and significant differences of the qualitative and quantitative characteristics, between the stages of oyster, increase the incidence of enterobacterias and species to the generous Vibrio, Aeromonas and Pseudomonas and lowering the colony unit former in ml of these species during the commercialization of the resource, which led to accept: the bacterial charge of the oyster, C. virginica, does not differ significantly in relation to the species diversity or the number of colony unit former in ml, during its commercialization from its collection to its distribution, sale and consumption.
